About Us
Wishbone Cafe was simply a “Wish” to have a restaurant that focused on the customer and the very best food that we could possibly offer. We knew if the food was good, some “bones” would be left around giving us the name, Wishbone Cafe.
Moving from Montgomery, Alabama to Houma, Louisiana, inspired owner Paul Dallas to dive deeper into his curiosity about the mystery behind Creole cuisine. After his day job as a hospital manager, he would frequent different restaurants to get their true essence. He quickly found that most, if not everyone in the area, were excellent cooks. Paul saw that at most restaurants, everyone told great stories, were welcoming and giving, full of fun, and had the most amazing food. A true foodies paradise. So he started a journey to learn as much as he could about the food, the industry, and the culture. What amazed him most was the hospitality. It was never a bad day in any establishment and he always met a new friend.
Paul moved back to Montgomery where we opened the doors of Wishbone Cafe’ in the spring of 2008. Wishbone Cafe was inspired by his stay in Louisiana. He wanted to capture the experience and share it with everyone who graces the doors of Wishbone Cafe’.
